Good evening amigos, I hope you are having a great weekend and eating lots of delicious food.
Today I felt the NEED to visit my favorite place in the whole city and enjoy the best waffles I have ever tasted.
I wonder if they make it better in Belgium than Susanna (the owner) and her talented team. It may seem simple to make a waffle, but trust me, it isn’t. I have tried and failed many times.
A simple dough yes but the cooking technique is the secret. You want to make them crispy on the outside and fluffy on the inside, while keeping the good flavor and right amount of fattiness, since the toppings -either sweet or savory- are gonna provide extra calories.
Usually, at least as I see it, waffles are one of those comfort foods that you constantly crave but cannot just eat often. And, in a funny way, you could even say that even a bad version of it with some sweet toppings is even good, haha. Think of a pizza from a kebab joint and you will understand exactly what I mean…
I have joked with Susanna that I want to work with her for a few days to learn how to make them, but I don’t know if she will let me, I would eat all of them…
I just don’t know what it is about them, like I said, it’s a pretty straight forward recipe, and I know I am not biased when I say this, but they just taste so good! I mainly eat the sweet versions -as you can see on the photos- but I have also tried a couple of savory ones and they are also fantastic.
When you visit them -and you MUST- you will see the team at the open kitchen working hard and passionately, you will feel the love that she and her team put into every single detail. Great ingredients, the coziest retro decor and a fantastic team of people trying their best to provide an outstanding experience.
It’s hard sometimes to put into words all the love and appreciation you have for certain restaurants, but with “Älskade Traditioner” I use every single compliment that comes to my mind.
They say an image speaks much more than a thousand words, so let’s do that.
