Swedish buns (recipe with photos)

As I have promised earlier, now I will tell you how to bake perfect Swedish cinnamon buns (kanelbullar) step by step with photos. Baking time – around 2 hours.

× Ingredients  ×

— For dough: —

  • Milk – 3 dl
  • Yeast – 50 g (or 1 pack dry)
  • Butter – 150 g
  • Sugar – 1 dl
  • Salt – 1/2 tsp
  • Flour – 800 g

— For filling: —

  • Butter – 150 g
  • Sugar – around 8 tbs
  • Cinnamon – 1 pack (around 4 tbs)
  • Vanillin (optional)
  • 1 Egg
  • Pearl sugar (for topping)

Lucky I had an opportunity to order all food through MatHem.se and it was delivered home to my door, so I didn’t have to go anywhere or pay extra.   🙂


Step 1 

Warm up the milk to 37C degrees (check with a finger that the milk isn’t too hot). Split yeast into small pieces and mix with milk until it melts fully.

Step 2 

Split butter into small bricks and put into the warm milk.

Step 3 

Add remaining ingredients: sugar, salt, flour (add in portions). Mix good, work on it with hands. The dough should be neither too liquid or too dense.

Step 4 

Cover with a towel and let it rest in a warm place for 30 min. My dough grew almost twice in size. The dough should be very fluffy, but not sticky.

Step 5 

Split the dough into four pieces and cover three of them with a towel, while you roll the first one. Keep in mind that the dough is getting dry very fast in the open air.

Step 6

Roll the dough approximately 5 mm thick, preferably in a rectangular form. Spread soft butter on top of it (do it with hands, then the dough won’t get teared), then pour sugar and cinnamon (or vanilla, which will make buns more tender).

Step 7 

Roll the dough up filling inside, cut into pieces 2 cm thick.

Step 8

Very important is to put the tail of the dough underneath, then the filling won’t leak out while baking.

Step 9

Put your rolls into baking forms (silicon, metal or paper). Grease them with egg on top so that the buns won’t get dry and then pour some pearl sugar on them or any other pastry decorations.

Step 10

Bake in the oven with temperature 200C. Time may vary from buns size and oven power. For me, it took around 10 minutes. When the dough is baked, it should get the golden colour and smell cinnamon or vanilla (mind that vanilla buns will be much lighter in colour).
